Information: In ancient Buddhist tradition, one of the most revered Bodhisattvas (enlightened beings whom lead others to enlightenment) was Guanyin, the Iron Goddess of Mercy. Throughout China, statues erected to honor her are everywhere: hillsides, roadsides, even farmer fields. In the Fujian province, where conditions for Ti Kuan tea leaf are exceptional, these statues are abundant. This exceptional tea grows on a unique sub-varietal of Camellia Sinensis and, according to legend, was discovered thanks to the benevolence of the goddess. Like all Oolong teas, Ti Kuan Tin Iron Goddess is a semi-fermented tea. This means it falls between black and green teas in terms of leaf color, liquor, and flavor. Where this remarkable tea breaks from other Oolong teas is during the baking (drying ) process, which is longer and more intense. The result is an exceptionally full-bodied cup with sweet floral notes, tones of wine, and a smooth clean finish. In addition to its heavenly flavor, drinking Ti Kuan Yin has many side benefits. Among them is a strong antioxidant count and possibly slimming characteristics.  In some parts of China, this tea compliments meals to quell overeating.
